Cauliflower Fried Rice

Ingredients
- 1 medium cauliflower, chopped into florets
- 2 eggs, beaten
- 1 cup peas and carrots (fresh or frozen)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp coconut aminos
- 1 tbsp sesame oil
- 1 tbsp olive oil
Instructions
- Pulse the cauliflower in a food processor until it resembles rice.
- Heat olive oil in a large skillet over medium heat. Add onion, garlic, peas, and carrots, and cook until tender, about 5 minutes.
- Push the vegetables to one side of the skillet and scramble the eggs in the empty space.
- Stir in the cauliflower rice and cook for another 5 minutes, stirring occasionally.
- Add coconut aminos and sesame oil, mixing well before serving.
