Vegan Lentil Bolognese
Packed with tender lentils, carrots and a rich tomato base, this dish will warm the soul and have you going back for seconds.
Ingredients
- 1 cup dried lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cans crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- 1/4 cup vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5-7 minutes until soft.
- Add garlic and tomato paste, and cook for another 2 minutes.
- Stir in the lentils, crushed tomatoes, oregano, basil, red pepper flakes, vegetable broth, salt and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender. Serve over your choice of pasta or zucchini noodles.
