Vegan Mushroom Risotto

Ingredients
- 1 1/2 cups Arborio rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 8 oz (230g) mushrooms, sliced
- 4 cups vegetable broth, warmed
- 1/4 cup white wine (optional)
- 2 tbsp olive oil
- 1 tbsp nutritional yeast
- Salt and pepper to taste
Instructions
- Heat 1 tbsp olive oil in a large pan over medium heat.
- Sauté onion and garlic for 5 minutes until softened.
- Add mushrooms and cook for another 5 minutes until they release their liquid.
- Stir in Arborio rice and cook for 2 minutes, coating the rice in the oil.
- Add white wine (if using) and cook until absorbed.
- Gradually add vegetable broth, 1 cup at a time, stirring constantly until absorbed before adding more. This process should take about 20-25 minutes.
- Stir in nutritional yeast, salt, and pepper. Serve warm.
