Vegan Mushroom Risotto

Ingredients

  • 1 1/2 cups Arborio rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (230g) mushrooms, sliced
  • 4 cups vegetable broth, warmed
  • 1/4 cup white wine (optional)
  • 2 tbsp olive oil
  • 1 tbsp nutritional yeast
  • Salt and pepper to taste

Instructions 

  • Heat 1 tbsp olive oil in a large pan over medium heat.
  • Sauté onion and garlic for 5 minutes until softened.
  • Add mushrooms and cook for another 5 minutes until they release their liquid.
  • Stir in Arborio rice and cook for 2 minutes, coating the rice in the oil.
  • Add white wine (if using) and cook until absorbed.
  • Gradually add vegetable broth, 1 cup at a time, stirring constantly until absorbed before adding more. This process should take about 20-25 minutes.
  • Stir in nutritional yeast, salt, and pepper. Serve warm.
