Vegan Sweet Potato & Black Bean Chilli
The exciting blend of heat, and sweetness with the heartiness of black beans, simmered in a savoury, spiced tomato broth in this Mexican inspired dish.
Ingredients
- 1 large sweet potato, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz / 400g) black beans, drained and rinsed
- 1 can (14.5 oz 400g) diced tomatoes
- 1 cup vegetable broth
- 1 tbsp chilli powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper, and sauté for 5 minutes until softened.
- Stir in sweet potato, chilli powder, cumin, smoked paprika, salt, and pepper. Cook for 2 minutes.
- Add black beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes until sweet potatoes are tender.
- Serve hot, garnished with avocado or fresh cilantro if desired.
