Vegan Lentil Bolognese

Packed with tender lentils, carrots and a rich tomato base, this dish will warm the soul and have you going back for seconds.

Ingredients

  • 1 cup dried lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cans crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • 1/4 cup vegetable broth
  • Salt and pepper to taste

Instructions 

  • In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5-7 minutes until soft.
  • Add garlic and tomato paste, and cook for another 2 minutes.
  • Stir in the lentils, crushed tomatoes, oregano, basil, red pepper flakes, vegetable broth, salt and pepper.
  • Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender. Serve over your choice of pasta or zucchini noodles.
