Vegan Chickpea Curry

A fragrant base of onions, garlic, and ginger, with the perfect blend of spices. This rich and satisfying curry has an indulgent coconut milk base.

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 can (15 oz / 425g) chickpeas, drained and rinsed
  • 1 can (14 oz / 400g) coconut milk
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 2 tbsp coconut oil
  • Salt and pepper to taste

Instructions 

  • In a large pot, heat coconut oil over medium heat. Add onion, garlic and ginger and sauté for 5 minutes until softened.
  • Stir in curry powder, cumin, turmeric, and cinnamon, and cook for 1 minute.
  • Add chickpeas, coconut milk, and diced tomatoes. Bring to a simmer and cook for 15-20 minutes until the sauce thickens.
  • Season with salt and pepper before serving. Serve over rice or with naan.
