Ingredients
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 can (15 oz / 425g) chickpeas, drained and rinsed
- 1 can (14 oz / 400g) coconut milk
- 1 can (14 oz / 400g) diced tomatoes
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 2 tbsp coconut oil
- Salt and pepper to taste
Instructions
- In a large pot, heat coconut oil over medium heat. Add onion, garlic and ginger and sauté for 5 minutes until softened.
- Stir in curry powder, cumin, turmeric, and cinnamon, and cook for 1 minute.
- Add chickpeas, coconut milk, and diced tomatoes. Bring to a simmer and cook for 15-20 minutes until the sauce thickens.
- Season with salt and pepper before serving. Serve over rice or with naan.
