Ingredients
- 1 can (14 oz / 400g ) artichoke hearts, drained and chopped
- 2 cups fresh spinach, chopped
- 1 cup raw cashews, soaked in water for 4 hours
- 1/2 cup unsweetened almond milk
- 3 cloves garlic, minced
- 1/4 cup nutritional yeast
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a blender, combine soaked cashews, almond milk, garlic, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth.
- In a large skillet, heat olive oil over medium heat. Add chopped spinach and cook until wilted, about 3 minutes.
- Stir in artichoke hearts and the cashew cream. Mix well and transfer to a baking dish.
- Bake for 20-25 minutes until the dip is bubbly and golden on top. Serve with crackers or veggies.
