Ingredients

  • 1 can (14 oz / 400g ) artichoke hearts, drained and chopped
  • 2 cups fresh spinach, chopped
  • 1 cup raw cashews, soaked in water for 4 hours
  • 1/2 cup unsweetened almond milk
  • 3 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions 

  • Preheat oven to 375°F (190°C).
  • In a blender, combine soaked cashews, almond milk, garlic, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth.
  • In a large skillet, heat olive oil over medium heat. Add chopped spinach and cook until wilted, about 3 minutes.
  • Stir in artichoke hearts and the cashew cream. Mix well and transfer to a baking dish.
  • Bake for 20-25 minutes until the dip is bubbly and golden on top. Serve with crackers or veggies.
