This dish combines rice noodles with a rich, creamy peanut sauce made with smooth peanut butter, fresh zesty lime, and a touch of maple syrup for sweetness. (to add some heat, a hint of sriracha gives just the right amount of punch) Perfect for a quick weeknight dinner or lunch.
Ingredients
- 8 oz (230g) rice noodles
- 1/4 cup peanut butter
- 2 tbsp soy sauce or use tamari for gluten free option
- 1 tbsp lime juice
- 1 tbsp maple syrup
- 1 tsp sriracha (optional)
- 1 tbsp sesame oil
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/4 cup chopped peanuts
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sriracha, and 1 tbsp of water to thin the sauce.
- In a large skillet, heat sesame oil over medium heat. Add bell pepper and carrot, and sauté for 3-4 minutes until tender.
- Add cooked noodles and peanut sauce to the skillet. Toss to combine and heat through.
- Serve topped with chopped peanuts and fresh cilantro.
