Experience authentic Thai flavors with our Vegan Thai Peanut Noodles. This dish combines rice noodles with a rich, creamy peanut sauce made with smooth peanut butter, fresh zesty lime, and a touch of maple syrup for sweetness. (to add some heat, a hint of sriracha gives just the right amount of punch) Perfect for a quick weeknight dinner or lunch.

Ingredients

  • 8 oz (230g) rice noodles
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce or use tamari for gluten free option
  • 1 tbsp lime juice
  • 1 tbsp maple syrup
  • 1 tsp sriracha (optional)
  • 1 tbsp sesame oil
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/4 cup chopped peanuts
  • 1/4 cup fresh cilantro, chopped

Instructions 

  • Cook rice noodles according to package instructions. Drain and set aside.
  • In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sriracha, and 1 tbsp of water to thin the sauce.
  • In a large skillet, heat sesame oil over medium heat. Add bell pepper and carrot, and sauté for 3-4 minutes until tender.
  • Add cooked noodles and peanut sauce to the skillet. Toss to combine and heat through.
  • Serve topped with chopped peanuts and fresh cilantro.
