Ingredients
- 1 large head of cauliflower, chopped into small florets
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 8 small corn tortillas
- 1 avocado, sliced
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, and salt.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until tender and slightly crispy.
- Warm the tortillas in a dry skillet or microwave.
- Fill each tortilla with roasted cauliflower, avocado slices, salsa, and cilantro. Serve with lime wedges.
- Optional toppings; Red cabbage, grated carrots, spring onions.
