Ingredients

  • 1 large head of cauliflower, chopped into small florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, and salt.
  • Spread the cauliflower on a baking sheet and roast for 25-30 minutes until tender and slightly crispy.
  • Warm the tortillas in a dry skillet or microwave.
  • Fill each tortilla with roasted cauliflower, avocado slices, salsa, and cilantro. Serve with lime wedges.
  • Optional toppings; Red cabbage, grated carrots, spring onions.
