Cauliflower Fried Rice

Ingredients

  • 1 medium cauliflower, chopped into florets
  • 2 eggs, beaten
  • 1 cup peas and carrots (fresh or frozen)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp olive oil

Instructions 

  • Pulse the cauliflower in a food processor until it resembles rice.
  • Heat olive oil in a large skillet over medium heat. Add onion, garlic, peas, and carrots, and cook until tender, about 5 minutes.
  • Push the vegetables to one side of the skillet and scramble the eggs in the empty space.
  • Stir in the cauliflower rice and cook for another 5 minutes, stirring occasionally.
  • Add coconut aminos and sesame oil, mixing well before serving.
